Rustic Loaf

Ingredients

Fiorfiore Azteco 1000 g

Brewer's yeast 40 g

Water 600-650 g

Decoration: FiorFiore Grani Decò

Preparation

Step1

Knead all the ingredients for 5 minutes at low speed and another 5 minutes at high speed, or until a homogeneous dough is achieved.

Step2

Let the dough rest at room temperature for 15-20 minutes, uncovered.

Step3

Divide the dough and shape it into loaves weighing 400-450 g each, then roll them.

Step4

Let the dough rest for another 10-15 minutes, then shape it again.

Step5

Proof in a chamber at 30°C (86°F) with 75% humidity for 60 minutes.

Step6

Decorate the surface with FiorFiore Grani Decò.

Step7

Bake in a static oven at 200°C (392°F) for 40-45 min.
