Choux Gran Mora

Pate A Choux

130g Water

130g Milk

140g Flour W 220

90g Butter

60g Gran Mora

300g Eggs

Craqueline Gran Mora

100g Gran Mora

100g Butter or Margarine

150g Sugar Demerara

100g Flour

Preparation

Choux Gran Mora

Step1

In a pan, bring the water to a boil with butter and Gran Mora.

Step2

Remove from heat and immediately add the sifted flour, mixing with a spoon.

Step3

Return to the heat and cook, stirring constantly, until the dough starts to come away from the sides of the pan.

Step4

Let the dough cool, then add the eggs one at a time, mixing well after each addition.

Step5

When the dough is smooth and homogeneous, transfer it to a pastry bag.

Step6

Form the choux on a lightly buttered baking tray and freeze them.

Step7

Once frozen, cut the craquelin and apply it on top of the choux.

Step8

Bake in a fan oven at 180°C for approximately 25 minutes.

Step9

Knead all the ingredients together until you get a smooth, homogeneous dough.

Step10

Roll out the dough between two sheets of baking paper to a 1 mm thickness and freeze it.

Step11

Once frozen, cut the dough into discs and place them on top of the choux before baking.
